Can I use more than one Wii Remote at once?

Yes you can.  However, this does require starting multiple instances of XWii, and probably creating separate config profiles for each.  If you want two players playing one game for example, they will each need their own config profile mapped to different keyboard keys, otherwise both Wii Remotes will effectively control the one player.

Just start a second instance of XWii and connect your second Wii Remote to it.

Can you add feature XYZ to XWii?

I've stopped developing XWii.  It already has all the features I ever planned for it (and then some), and I have other projects I want to work on.  Further development of XWii is being carried on here: http://www.photofiltre-lx.org/projects/xwii
